Easy Creamy Crockpot Chicken Enchilada Soup

A creamy, rich, and flavorful chicken enchilada soup made entirely in the slow cooker. This hands-off recipe combines tender chicken, black beans, corn, and a velvety cream cheese broth for the ultimate comfort food.

  • 1.5 pounds boneless, skinless chicken breasts
  • 28 ounces red enchilada sauce
  • 4 cups low-sodium chicken broth
  • 8 ounces cream cheese, softened
  • 1 cup frozen corn
  • 15 ounces black beans, drained and rinsed
  • 10 ounces diced tomatoes with green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: shredded cheddar or Monterey Jack cheese, sour cream, fresh cilantro, diced avocado, crushed tortilla chips, lime wedges

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, drain and rinse the black beans, and measure out your spices.
  2. Place the chicken breasts in the bottom of a 6-quart or larger slow cooker.
  3. Pour in the enchilada sauce, chicken broth, and diced tomatoes with green chiles. Swirl to combine.
  4. Scatter the diced onion and minced garlic over the top. Sprinkle with cumin, chili powder, smoked paprika, salt, and pepper. Stir gently.
  5. Add the drained black beans and frozen corn. Do not stir.
  6. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fork-tender.
  7. Shred the chicken directly in the crockpot using two forks.
  8. Cut the softened cream cheese into cubes and stir into the soup until melted and smooth. Let cook for another 10-15 minutes on low, stirring occasionally.
  9. Taste and adjust seasoning as needed.
  10. Serve hot with desired toppings.

Notes

For extra creaminess, use an immersion blender to partially blend the soup before adding the cream cheese. If the soup is too thick, stir in additional chicken broth. If too thin, cook with the lid off for 15-20 minutes. Cream cheese must be at room temperature to avoid lumps.
