Easy Crockpot Chicken Noodle Soup Using Rotisserie Chicken

A quick and comforting chicken noodle soup made with rotisserie chicken and a flavorful broth infused with the bones, perfect for busy weeknights or sick days.

  • 1 large rotisserie chicken (about 23 pounds)
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped
  • Optional: 1 tablespoon lemon juice

Instructions

  1. Prep the chicken: Remove all meat from the rotisserie chicken while still warm. Set shredded meat aside. Reserve bones and skin for broth.
  2. Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add onion, carrots, and celery. Cook 5-7 minutes until onions are translucent and carrots soften. Add garlic and cook 1 minute more.
  3. Build the broth: Transfer sautéed vegetables to a 6-quart or larger slow cooker. Add chicken broth, water, thyme, rosemary, bay leaf, salt, and pepper. Nestle the reserved chicken bones and skin into the liquid.
  4. Slow cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  5. Remove the bones: Carefully remove and discard chicken bones and skin using tongs.
  6. Cook the noodles: Bring a large pot of salted water to a boil. Cook egg noodles according to package directions until al dente. Drain well.
  7. Add the chicken and noodles: Stir shredded chicken into the crockpot. Add cooked noodles and stir gently. Adjust seasoning to taste. If using, stir in lemon juice.
  8. Serve: Ladle soup into bowls and garnish with fresh parsley.

Notes

For best results, cook noodles separately and add just before serving to prevent mushiness. Store leftover noodles separately from broth. The soup can be frozen without noodles for up to 3 months.
