Easy Crockpot Delicata Squash Soup with Sage Brown Butter

A cozy, hands-off soup made with tender delicata squash and finished with nutty sage brown butter. Perfect for busy weeknights, this recipe requires no peeling and comes together in the crockpot for a restaurant-quality meal with minimal effort.

  • 2 medium delicata squash (about 22.5 pounds total)
  • 1 medium yellow onion, roughly chopped
  • 3 cloves garlic, smashed
  • 3 cups low-sodium vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 3 tablespoons unsalted butter
  • 1 tablespoon dried sage (rubbed sage preferred)
  • Optional garnish: toasted pumpkin seeds, heavy cream drizzle, or extra crispy sage leaves

Instructions

  1. Wash the delicata squash well. Cut off both ends, slice in half lengthwise, and scoop out seeds and stringy bits. Slice into half-moons about 1-inch thick.
  2. Add chopped onion, smashed garlic, and sliced squash to the crockpot. Pour vegetable broth over everything. Add salt, pepper, and nutmeg. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until squash is fork-tender.
  4. Turn off the crockpot or switch to warm. Use an immersion blender to blend the soup directly in the pot until smooth. If using a regular blender, let soup cool for 10 minutes, then blend in batches.
  5. While soup blends, heat a small skillet over medium heat. Add butter and melt, swirling occasionally. When butter turns golden brown and smells nutty (about 3-4 minutes), immediately add dried sage. Stir for 15 seconds, then remove from heat.
  6. Pour sage brown butter into blended soup and stir to combine. Taste and adjust salt and pepper if needed. Ladle into bowls and garnish as desired. Serve hot.

Notes

Don’t skip the nutmeg—it adds warmth. Watch the brown butter carefully as it can burn quickly. Season in layers: add salt at the beginning, then adjust after blending and adding brown butter. If soup is too thin, simmer on stovetop with lid off; if too thick, add more broth. Make-ahead: prep squash and onion the night before.
