These caprese skewers shaped like graduation caps combine fresh mozzarella, cherry tomatoes, and basil with mini square crackers for a quick, elegant, and crowd-pleasing party appetizer.

Ingredients

  • Ciliegine mozzarella balls (small fresh mozzarella pearls)
  • Cherry tomatoes, halved or whole depending on size
  • Fresh basil leaves
  • Mini square crackers or flatbread crisps (e.g., Ritz Toasted Chips)
  • Wooden toothpicks or small bamboo skewers (6-inch length)
  • Balsamic glaze for drizzling
  • Extra virgin olive oil (optional)
  • Salt and freshly ground black pepper to taste
  • Optional: cream cheese or ricotta (for stability under cracker)
  • Optional: small piece of chive or thin basil stem (for tassel detail)
  • Optional: kalamata olives or crushed red pepper flakes for garnish

Instructions

  1. Rinse the cherry tomatoes and basil leaves under cold water and pat dry. Slice the tomatoes in half if they’re large. Drain and pat dry the ciliegine mozzarella balls. (About 5 minutes)
  2. In a medium bowl, gently toss the mozzarella and tomatoes with a pinch of salt, freshly ground black pepper, and a light drizzle of olive oil. Set aside for 5 minutes to marinate slightly.
  3. Take a wooden toothpick or bamboo skewer and thread one mozzarella ball, followed by a folded basil leaf, then a cherry tomato. (About 10 minutes for 20 skewers)
  4. Carefully place a mini square cracker on top of the tomato, pressing slightly so it balances like a mortarboard. Optionally, add a tiny dab of cream cheese or ricotta between the cracker and tomato for extra stability.
  5. Optional: Thread a small piece of chive or thin basil stem through the cracker’s center to mimic a tassel.
  6. Arrange the completed skewers on a serving platter. Drizzle balsamic glaze over the skewers just before serving.
  7. Sprinkle a tiny bit of flaky sea salt or cracked pepper on top for a finishing touch.

Notes

Assemble skewers as close to serving time as possible to keep crackers crisp and basil fresh. Store assembled mozzarella, tomato, and basil skewers refrigerated without crackers, then add crackers and glaze just before serving. Use firm ciliegine mozzarella and dry basil leaves to avoid sogginess. Drizzle balsamic glaze sparingly to prevent crackers from becoming soggy.
