Easy Garlic Butter Zucchini Noodles Recipe with Cherry Tomato Sauce

A quick and flavorful recipe featuring tender zucchini noodles sautéed in garlic butter and topped with a fresh cherry tomato sauce. Perfect for a light, comforting meal without the heaviness of traditional pasta.

  • 4 medium zucchinis (about 600g/1.3 lbs), spiralized into noodles
  • 2 cups (300g) cherry tomatoes, halved
  • 3 tablespoons unsalted butter
  • 3 large garlic cloves, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper
  • A pinch of red pepper flakes (optional)
  • A handful of fresh basil leaves, torn
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Wash and dry the zucchinis. Using a spiralizer, create noodles and set them aside in a colander to drain any excess moisture (about 10 minutes).
  2. Heat 1 tablespoon of butter with the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant but not browned, about 1 minute.
  3. Add the cherry tomatoes to the skillet and cook, stirring occasionally, until they soften and start breaking down, around 6–8 minutes. Gently press some tomatoes with the back of your spoon to release juices and create a light sauce.
  4. Season the sauce with salt, pepper, and a pinch of red pepper flakes (if using). Stir well and reduce heat to low to keep warm.
  5. In a separate large pan, melt the remaining 2 tablespoons of butter over medium heat. Add the spiralized zucchini and cook, tossing gently, for 2–3 minutes until tender but still slightly firm.
  6. Transfer the zucchini noodles to the skillet with the cherry tomato sauce. Toss gently to coat the noodles in the sauce and butter. Let heat through for another minute.
  7. Remove from heat and sprinkle torn basil leaves on top. Give a final gentle toss.
  8. Serve immediately, optionally topped with grated Parmesan cheese.

Notes

Drain or pat dry spiralized zucchini before cooking to prevent watery noodles. Avoid overcooking zucchini noodles to keep them tender but not mushy. Use fresh garlic for best flavor. Butter and olive oil combination prevents burning. For vegan version, substitute butter with vegan margarine or extra olive oil and omit Parmesan cheese.
