These Easy Halloween Rice Krispie Treat Pops are a quick, no-bake treat shaped into pops and decorated as mummies, monsters, and pumpkins. Perfect for Halloween parties, they take just 25 minutes from start to finish and are a hit with kids and adults alike.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 1 package (10 ounces) marshmallows (standard size)
  • 6 cups crispy rice cereal (e.g., Kellogg’s Rice Krispies)
  • 1/4 teaspoon vanilla extract (optional)
  • Pinch of salt
  • Lollipop sticks (about 6 inches long)
  • Candy melts or white chocolate chips (for coating and decorating)
  • Candy eyes (googly kind)
  • Orange and green sprinkles (for pumpkin pops)
  • Black icing tube (for drawing mummy wraps and spider legs)
  • Assorted Halloween sprinkles (bats, ghosts, pumpkins, etc.)

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, leaving some overhang on the sides. Lightly grease the parchment with butter or non-stick spray.
  2. In a large pot over medium heat, melt the 3 tablespoons of butter until it starts to bubble slightly.
  3. Pour the entire bag of marshmallows into the pot. Stir constantly until the marshmallows are completely melted and smooth, about 3-4 minutes.
  4. Remove the pot from heat. Stir in the vanilla extract and a pinch of salt.
  5. Pour the 6 cups of crispy rice cereal into the pot. Fold gently until all the cereal is coated in the marshmallow mixture.
  6. Transfer the mixture to the prepared pan. Use a greased spatula or buttered hands to press it into an even layer. Do not press too hard.
  7. Allow the mixture to cool at room temperature for about 15-20 minutes until firm enough to cut but still slightly warm.
  8. Use a sharp knife to cut the treats into 2-inch squares or use cookie cutters for fun shapes.
  9. Gently push a lollipop stick into each piece, about halfway through. If the treat cracks, squeeze it back together.
  10. In a microwave-safe bowl, melt the candy melts according to package directions (30-second intervals, stirring between each) until smooth.
  11. Dip each pop into the melted candy, letting any excess drip off. Place on parchment paper and add decorations (candy eyes, sprinkles, icing) while the coating is still wet.
  12. Let the pops set at room temperature for about 20 minutes, or refrigerate for 10 minutes if in a hurry.

Notes

For best texture, use full-size marshmallows and cook on medium heat to avoid scorching. Keep a bowl of warm water nearby to dip fingers in when pressing the mixture to prevent sticking. Insert lollipop sticks at a slight angle for better structural support. The treats can be made a day ahead and decorated later. Store in an airtight container at room temperature for up to 3 days; do not refrigerate.
