  • 3 pounds fresh peaches, peeled, pitted, and chopped
  • 1/4 cup granulated sugar (50 grams)
  • 1 whole vanilla bean, split and scraped
  • 2 tablespoons fresh lemon juice (30 ml)
  • 1/4 cup water (60 ml)

Instructions

  1. Prepare the peaches by peeling, pitting, and chopping into roughly 1/2-inch pieces (about 15 minutes).
  2. In a large heavy-bottomed pot, combine chopped peaches, granulated sugar, water, and the scraped seeds plus pod from the split vanilla bean. Stir gently to combine.
  3. Place the pot over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent sticking.
  4. After about 10 minutes, add fresh lemon juice to the pot.
  5. Continue to simmer gently for 20-25 minutes, stirring every few minutes until the mixture thickens slightly and peaches soften but remain chunky. Add a splash of water if too thick.
  6. Remove the vanilla pod once desired consistency is reached. Taste and adjust sweetness if needed.
  7. Ladle hot jam into sterilized jars, leaving about 1/4 inch headspace. Seal tightly and let cool to room temperature.
  8. Store jam in the refrigerator for up to 3 weeks or freeze for longer storage.

Use ripe but firm peaches for best texture. Slow simmering prevents burnt flavor and preserves fresh taste.
