  • 20 cherry tomatoes, ripe and firm
  • 20 fresh mozzarella balls (bocconcini), drained
  • 20 fresh basil leaves, washed and patted dry
  • ¼ cup balsamic glaze (homemade or store-bought)
  • 12 tablespoons extra virgin olive oil for drizzling
  • Salt to taste
  • Freshly ground black pepper to taste
  • 20 wooden skewers or toothpicks (6-inch)

Instructions

  1. Rinse the cherry tomatoes and basil leaves under cold water. Pat dry thoroughly.
  2. Drain the fresh mozzarella balls in a fine mesh strainer to remove excess liquid.
  3. (Optional) Make the balsamic glaze by pouring ½ cup balsamic vinegar into a small saucepan and simmering over medium heat until thickened, about 10-15 minutes. Let cool.
  4. Assemble the skewers by threading one cherry tomato, one basil leaf (folded if large), and one mozzarella ball onto each wooden skewer.
  5. Lay the assembled skewers flat on a serving platter.
  6. Drizzle the skewers with extra virgin olive oil and sprinkle with flaky sea salt and freshly ground black pepper.
  7. Drizzle the balsamic glaze in thin ribbons over the skewers just before serving.

Notes

Assemble skewers ahead but wait to drizzle balsamic glaze and olive oil until just before serving to prevent sogginess. Use fresh basil leaves only. For a dairy-free version, substitute mozzarella with marinated tofu or vegan cheese. Lightly grilling skewers for 1-2 minutes per side adds a smoky flavor.
