  • ½ cup mayonnaise (120 ml)
  • 2 tablespoons grated Parmesan cheese (15 g)
  • 1 tablespoon fresh lemon juice (15 ml)
  • 1 teaspoon Worcestershire sauce (5 ml)
  • 1 garlic clove, minced finely
  • ¼ teaspoon anchovy paste (optional)
  • Black pepper, to taste
  • About 12 small to medium romaine lettuce leaves
  • Cherry tomatoes, halved (optional)
  • Croutons, crushed (optional)

Instructions

  1. Pat the chicken pieces dry with paper towels. Season with salt, pepper, and garlic powder, tossing to coat evenly. (About 5 minutes)
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add chicken pieces in a single layer without overcrowding. Cook 4-5 minutes on one side until golden brown, then flip and cook another 3-4 minutes until cooked through (internal temperature 165°F/74°C). Remove from heat and toss immediately with grated Parmesan cheese. (10-12 minutes)
  3. In a bowl, whisk together mayonnaise, Parmesan, lemon juice, Worcestershire sauce, minced garlic, anchovy paste (if using), and black pepper. Adjust seasoning to taste. (5 minutes)
  4. Rinse and dry romaine leaves thoroughly. Choose smaller leaves for mini wraps and trim bases if needed to create a cup shape. (5 minutes)
  5. Spoon a small amount of chicken onto each lettuce leaf, drizzle with dressing, and add optional cherry tomatoes or crushed croutons. Fold gently and serve or pack. (5 minutes)

Notes

Pat chicken dry before cooking to ensure browning. Use medium-high heat to avoid steaming. Keep lettuce dry and assemble wraps just before eating to prevent sogginess.
