  • 3/4 cup (190 g) natural creamy peanut butter
  • 1/3 cup (113 g) honey
  • 1/2 cup (90 g) dark chocolate chips
  • 2 tablespoons (14 g) ground flaxseed (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Gather your ingredients: rolled oats, creamy peanut butter, honey, dark chocolate chips, ground flaxseed, vanilla extract, and salt.
  2. In a mixing bowl, stir together the oats, ground flaxseed, and salt.
  3. Add the peanut butter, honey, and vanilla extract to the dry ingredients. Mix until the oats are fully coated and the mixture is sticky and cohesive.
  4. Gently fold in the dark chocolate chips, keeping them whole.
  5. Scoop about 1 tablespoon of the mixture and roll it between your palms into balls. If sticky, wet your hands lightly or chill the dough for 10 minutes.
  6. Place the formed bites on a lined baking sheet or plate.
  7. Chill for at least 30 minutes to firm up the bites. Alternatively, freeze for 15 minutes if in a rush.
  8. Store the bites in an airtight container in the refrigerator for up to one week or freeze for up to three months.

Notes

Use natural peanut butter with no added oils to avoid oily bites. Chill bites well to prevent crumbliness. For a chewier texture, swap half the rolled oats for quick oats. Optional add-ins include chopped nuts, chia seeds, or shredded coconut. For nut-free version, substitute peanut butter with sunflower seed butter and flaxseed with chia seeds. Protein powder can be added with adjustment of wet ingredients.
