  • 2 tablespoons (14 g) ground flaxseed (optional)
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 teaspoon (1.5 g) cinnamon
  • Pinch of salt

Instructions

  1. Place about 1 cup (50 g) of mini pretzels into a large zip-top bag. Seal it tightly and gently crush using a rolling pin until mostly small pieces with a few larger chunks remain, about 3-4 minutes. Avoid crushing into powder.
  2. In a large mixing bowl, combine 1 cup (90 g) rolled oats, crushed pretzels, 2 tablespoons (14 g) ground flaxseed if using, 1/2 teaspoon (1.5 g) cinnamon, and a pinch of salt. Stir to evenly distribute, about 1-2 minutes.
  3. In a separate smaller bowl, mix 1 cup (240 ml) peanut butter, 1/3 cup (80 ml) honey, and 1 teaspoon (5 ml) vanilla extract until smooth and combined, about 2 minutes.
  4. Pour the peanut butter mixture over the dry ingredients. Fold together with a spatula or spoon until well mixed and sticky. Add 1-2 tablespoons water or more honey if too dry, about 3-4 minutes.
  5. Use hands to roll mixture into 1-inch (2.5 cm) balls, yielding about 20-24 bites. Wet hands or dust with oat flour if mixture sticks, rolling takes 5-7 minutes.
  6. Place bites on a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
  7. Serve chilled or store in an airtight container in the refrigerator for up to one week or freeze for longer storage.
