  • ¾ cup granulated sugar (150g)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour (190g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips (optional)
  • 2 tablespoons sour cream or Greek yogurt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Grease your loaf pan with butter or non-stick spray, then line it with parchment paper, leaving overhang on the long sides.
  2. Mash the bananas in your mixing bowl using a fork or potato masher until mostly smooth with a few small lumps. You want about 1 ½ cups of mashed banana.
  3. Add the melted butter and sugar. Stir until combined. The mixture will look a little grainy—that’s normal.
  4. Add the eggs and vanilla. Stir gently until the yolks disappear. Over-mixing here can make the bread tough, so stop as soon as it looks uniform.
  5. Add the flour, baking soda, salt, and cinnamon. Stir with a wooden spoon or spatula using broad strokes. Stop when you no longer see dry flour—about 15 to 20 strokes. A few lumps are okay.
  6. Fold in any add-ins (nuts, chocolate chips, or sour cream) gently. Don’t stir vigorously or you’ll deflate the batter.
  7. Pour the batter into the prepared pan. Use your spatula to spread it evenly. Tap the pan on the counter a few times to release air bubbles.
  8. Bake for 50 to 60 minutes. Start checking at 50 minutes. The top should be golden brown and cracked. Insert a toothpick into the center; if it comes out clean or with a few moist crumbs, it’s done.
  9. Cool in the pan for 10 minutes. Then lift the bread out using the parchment sling and transfer it to a cooling rack. Let it cool completely before slicing—about 1 hour.
