This hearty and flavorful taco soup is made in one pot with seasoned beef, beans, corn, and a perfectly spiced broth. It’s a crowd-pleasing, budget-friendly meal that’s perfect for potlucks and dinner parties.

  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 pounds ground beef (80/20 preferred)
  • 1 packet (1 ounce) taco seasoning
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 can (14.5 ounces) diced tomatoes with green chiles, undrained
  • 1 can (15 ounces) tomato sauce
  • 4 cups low-sodium beef broth
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) whole kernel corn, drained (or 1.5 cups frozen corn)
  • Shredded cheddar cheese (for serving)
  • Sour cream (for serving)
  • Diced avocado (for serving)
  • Fresh cilantro, chopped (for serving)
  • Tortilla chips or strips (for serving)
  • Lime wedges (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for about 5 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground beef to the pot. Break it up and cook until browned, about 7-8 minutes. Spoon out excess fat, leaving about 1 tablespoon.
  3. Sprinkle taco seasoning, cumin, and smoked paprika over the beef. Stir and cook for 1 minute to bloom the spices.
  4. Pour in diced tomatoes with green chiles (undrained) and tomato sauce. Stir, scraping up browned bits. Add beef broth and bring to a simmer.
  5. While soup simmers, mash 1 cup of drained black beans in a small bowl with a fork or potato masher until chunky paste forms.
  6. Stir in whole black beans, pinto beans, mashed beans, and corn. The mashed beans will thicken the broth as it simmers.
  7. Bring soup to a gentle boil, then reduce heat to low. Simmer uncovered for 20-25 minutes, stirring occasionally. Taste and adjust seasoning with salt and pepper.
  8. Remove from heat and let rest for 5 minutes. Ladle into bowls and serve with desired toppings.

Notes

For a thicker soup, mash 1 cup of beans before adding. This soup tastes even better the next day. To make it ahead, prepare and refrigerate; reheat gently on the stovetop. For a vegetarian version, omit beef and use vegetable broth.
