  • 1 can (12 oz) evaporated milk
  • 3 large eggs, room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup (2 sticks) unsalted butter, melted
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, eggs, granulated sugar, vanilla extract, pumpkin pie spice, and ground cinnamon until smooth and well combined.
  3. Pour the filling into the prepared dish and spread it evenly with a spatula.
  4. Sprinkle the dry cake mix evenly over the top of the pumpkin filling. Do not stir.
  5. Drizzle the melted butter over the cake mix, covering as much as possible. If using nuts, sprinkle them on top now.
  6. Bake for 50-55 minutes, until the top is golden brown and the edges are bubbling. The center may still jiggle slightly.
  7. Let it cool for at least 20 minutes before serving. Serve warm or at room temperature.

Notes

Don’t stir the cake mix into the pumpkin layer; keep the layers separate. Let the cake cool for at least 20 minutes to allow the filling to set properly. For a crunchier top, use cold melted butter. Toast nuts before adding for extra flavor. If edges brown too quickly, tent with foil for the last 10 minutes of baking.
