  • 1.5 pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 medium bell peppers (assorted colors: red, yellow, green), sliced into strips
  • 2 medium onions (yellow or white), sliced into thin wedges
  • 3 tablespoons olive oil
  • 2 tablespoons fajita seasoning (store-bought or homemade blend of chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper)
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional toppings: chopped fresh cilantro, sliced jalapeños, sour cream, shredded cheese, warm flour or corn tortillas

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Slice chicken breasts into thin, even strips about 1/2 inch wide.
  3. Slice bell peppers and onions into similar-sized strips or wedges about 1/2 inch thick.
  4. In a large mixing bowl, combine chicken strips, bell peppers, and onions. Drizzle with olive oil, then sprinkle fajita seasoning, minced garlic, salt, and pepper. Toss thoroughly until evenly coated.
  5. Spread the mixture in a single layer on a rimmed sheet pan. Avoid overcrowding; use two pans if necessary.
  6. Roast in the preheated oven for 20-25 minutes, stirring and flipping halfway through (around 12 minutes), until chicken reaches 165°F (74°C) and vegetables are tender with browned edges.
  7. Remove from oven and squeeze fresh lime juice over the fajitas.
  8. Serve immediately with warm tortillas and optional toppings.

Avoid overcrowding the pan to prevent steaming instead of roasting. Flip halfway through cooking for even browning. Use thin, even slices for uniform cooking.
