A simple, festive fall mimosa bar featuring sparkling apple cider and prosecco, with customizable garnishes. Perfect for brunch, Thanksgiving, or any autumn gathering, this setup comes together in under 10 minutes and is a guaranteed crowd-pleaser.

Ingredients

Scale
  • 1 bottle sparkling apple cider, chilled
  • 1 bottle prosecco or champagne (dry Brut style), chilled
  • 1 cup apple cider (optional, for extra apple flavor)
  • 46 cinnamon sticks
  • 46 fresh rosemary sprigs
  • 12 apples (Honeycrisp or Granny Smith), thinly sliced
  • 1/2 cup pomegranate seeds
  • Maple syrup (optional, for rimming glasses)
  • 2 tablespoons sugar mixed with 1 teaspoon cinnamon (for rimming glasses)

Instructions

  1. Prep your garnishes: Thinly slice apples and toss with lemon juice to prevent browning. Remove pomegranate seeds (submerge in water to separate seeds from pith). Set aside cinnamon sticks and rosemary sprigs.
  2. Rim your glasses (optional): Dip glass rims in maple syrup, then into cinnamon sugar mixture. Let set for a minute.
  3. Set up your bar: Arrange garnishes in small bowls. Place chilled prosecco and sparkling apple cider nearby. If using regular apple cider, put in a separate small pitcher.
  4. Build each glass: Add garnishes to the bottom (pomegranate seeds, cinnamon stick, rosemary sprig). Fill halfway with sparkling apple cider, then top with prosecco. Ratio is customizable (50/50 recommended).
  5. Serve: Garnish with an apple slice on the rim. Use cinnamon stick as a stirrer. Enjoy immediately.

Notes

Temperature matters: chill prosecco and apple cider for at least 4 hours. Don’t skip the rosemary—it adds sophistication. Pour prosecco slowly down the side of the glass to avoid overflow. For a non-alcoholic version, substitute prosecco with ginger ale or club soda. Pre-fill glasses with garnishes and apple cider base for crowds.
