  • 4 large flour tortillas (8-inch size)
  • 8 ounces thinly sliced deli turkey (preferably low sodium)
  • 4 slices cooked bacon strips (center-cut preferred)
  • 4 slices cheddar cheese (about 4 ounces), sharp or mild
  • 1 cup shredded romaine or iceberg lettuce
  • 1 medium tomato, thinly sliced
  • 3 tablespoons honey mustard sauce (store-bought or homemade: 2 tbsp Dijon mustard, 1 tbsp honey, splash of apple cider vinegar)
  • Optional: thinly sliced avocado, red onion rings, mayo or ranch dressing

Instructions

  1. Cook bacon strips in a skillet over medium heat until crispy, about 6–8 minutes, flipping halfway. Drain on paper towels. If using pre-cooked bacon, warm slightly or use as is.
  2. Mix honey mustard in a small bowl by combining 2 tablespoons Dijon mustard, 1 tablespoon honey, and a splash of apple cider vinegar. Stir until smooth. Adjust to taste. Alternatively, use 3 tablespoons store-bought honey mustard.
  3. Lay each tortilla flat on a clean surface or cutting board.
  4. Spread a thin, even layer of honey mustard over each tortilla, leaving a 1/2-inch border around the edges to prevent sogginess.
  5. Layer 2 ounces (about 4 slices) of turkey evenly on each tortilla. Add a slice of cheddar cheese, 1 slice of crispy bacon (cut in half if needed), a handful of shredded lettuce, and 2–3 thin tomato slices. Avoid overfilling.
  6. Roll the tortilla tightly but gently from one edge, tucking in the filling as you roll. Wrap in plastic wrap or parchment paper and refrigerate for 15–20 minutes to set.
  7. Using a sharp serrated knife, slice each rolled tortilla into 1-inch thick pinwheels. Arrange on a serving platter with the cut side up.
