Ingredients

  • Pre-made sugar cookie dough (e.g., Pillsbury refrigerated dough)
  • All-purpose flour (for dusting and rolling dough if making from scratch)
  • Vanilla ice cream (softened slightly for easier spreading)
  • Optional: Strawberry or blueberry ice cream for color variation
  • Red, white, and blue sprinkles (mix of nonpareils and jimmies recommended)
  • Optional: Edible glitter or sanding sugar for extra sparkle
  • Non-stick cooking spray or parchment paper (to prep baking sheet)
  • Cooling rack (to cool cookies evenly and faster)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. Roll out sugar cookie dough on a lightly floured surface to about 1/4 inch thickness. Use star-shaped cookie cutter to cut shapes and place 1 inch apart on baking sheet.
  3. Bake cookies for 8–10 minutes until edges are lightly golden but centers remain soft. Transfer to wire cooling rack to cool completely.
  4. Let vanilla ice cream sit at room temperature for 5–10 minutes to soften but not melt.
  5. Scoop about 2 tablespoons of softened ice cream onto the flat side of one cookie. Press a second cookie on top to form a sandwich without squeezing out the ice cream.
  6. Pour sprinkles into a shallow bowl and gently roll the edges of each sandwich in sprinkles to coat the ice cream edges.
  7. Place assembled sandwiches on a baking sheet and freeze for at least 2 hours until firm.
  8. Remove from freezer about 5 minutes before serving to soften slightly for easier eating.

Notes

Do not assemble sandwiches while cookies are warm to prevent ice cream melting. Soften ice cream just enough to spread without melting. Roll edges in sprinkles quickly and gently. If ice cream softens too much during assembly, freeze sandwiches briefly before rolling in sprinkles. Gluten-free and dairy-free substitutions are possible using gluten-free cookie dough and dairy-free ice cream.
