  • 4 cups low sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano (preferably Mexican oregano)

  • 2 tbsp olive oil or vegetable oil
  • 1/2 cup fresh cilantro, chopped (divided)
  • 1 lime, juiced
  • 1/2 cup sour cream or Mexican crema (or Greek yogurt for lighter version)

Instructions

  1. Prepare the Hatch chiles: If using fresh, roast under broiler or grill until blackened (5-7 minutes per side). Steam in a sealed bag or covered bowl for 10 minutes, peel skins, remove seeds, and chop. If canned, drain and chop.
  2. Brown the pork: Heat olive oil in a Dutch oven over medium-high heat. Brown pork cubes in batches for 5-7 minutes per batch. Remove and set aside.
  3. Sauté aromatics: In the same pot, cook diced onion until translucent, about 5 minutes. Add garlic and cook 1 minute until fragrant.
  4. Add spices: Stir in cumin and oregano, toasting for 30 seconds.
  5. Combine ingredients: Return pork to pot. Add chopped Hatch chiles and hominy. Pour in chicken broth, scraping bottom to loosen browned bits. Season with salt and pepper.
  6. Simmer: Bring to a low boil, reduce heat to low, cover, and simmer gently for 45-50 minutes, stirring occasionally until pork is tender.
  7. Prepare lime crema: Mix sour cream or crema with lime juice and a pinch of salt in a small bowl. Adjust lime juice to taste.
  8. Final touches: Stir half of the chopped cilantro into the stew. Adjust seasoning if needed.
  9. Serve: Ladle stew into bowls, drizzle with lime crema, and sprinkle remaining cilantro on top.

For best flavor, roast fresh Hatch chiles yourself. Browning pork properly adds depth. Slow and steady simmering ensures tender meat. Lime crema brightens and balances richness.
