Flavorful Grilled Watermelon Steak Recipe with Easy Balsamic Reduction

A smoky, juicy grilled watermelon steak drizzled with a tangy balsamic reduction, perfect as a fresh and unexpected summer dish.

  • 1 ripe seedless watermelon, cut into 1 to 1.5-inch thick steaks
  • Extra virgin olive oil, for brushing
  • Salt, to taste
  • Black pepper, freshly ground, to taste
  • 1 cup (240 ml) balsamic vinegar
  • 2 tablespoons (30 ml) honey or maple syrup
  • Fresh basil or mint, chopped (optional)

Instructions

  1. Slice the watermelon into 1 to 1.5-inch thick steaks, trimming rind if desired.
  2. Pour balsamic vinegar into a small saucepan and add honey or maple syrup. Simmer over medium heat, stirring occasionally, until reduced by half and syrupy, about 10-15 minutes.
  3. Preheat grill or grill pan to medium-high heat (about 400°F / 200°C). If using a grill pan, preheat for 5 minutes and brush lightly with olive oil.
  4. Brush both sides of watermelon steaks with olive oil and season with salt and black pepper.
  5. Grill watermelon steaks for 3-4 minutes per side until grill marks appear and watermelon caramelizes but remains juicy. Use tongs to flip carefully.
  6. Transfer grilled watermelon to a serving plate and drizzle generously with balsamic reduction. Sprinkle with fresh herbs if desired.
  7. Serve immediately for best flavor contrast.

Notes

If balsamic reduction thickens too much after cooling, gently warm it or stir in a teaspoon of water to loosen. Use thick watermelon slices to prevent falling apart on the grill. Brush watermelon well with olive oil to prevent sticking. Watch balsamic reduction closely to avoid burning.
