A quick and easy tart featuring a flaky puff pastry crust topped with a creamy herbed goat cheese filling and vibrant heirloom tomatoes, perfect for summer gatherings or casual meals.

  • 1 tablespoon olive oil or melted butter (for brushing)
  • 4 ounces goat cheese, softened
  • 2 tablespoons cream cheese or mascarpone
  • 1 teaspoon fresh thyme leaves, chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 small garlic clove, minced (optional)
  • Salt and freshly ground black pepper, to taste
  • 34 medium heirloom tomatoes (about 12 oz / 340 g), thinly sliced
  • 1 tablespoon olive oil, for drizzling
  • Fresh basil leaves, torn or chiffonade (for garnish)
  • Flaky sea salt, for finishing
  • Freshly ground black pepper
  • Optional: 1 teaspoon honey or balsamic glaze
  • Optional: 1 tablespoon pine nuts or toasted walnuts

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a tart pan.
  2. Roll out the thawed puff pastry on a lightly floured surface to smooth creases. Transfer to prepared pan or baking sheet.
  3. Score a 1-inch border around the edges of the pastry with a sharp knife, being careful not to cut all the way through.
  4. In a bowl, combine softened goat cheese, cream cheese, chopped thyme, rosemary, minced garlic, salt, and pepper. Blend until smooth and spreadable.
  5. Spread the cheese mixture evenly within the scored border on the pastry, leaving edges clear.
  6. Arrange heirloom tomato slices over the cheese in a single slightly overlapped layer. Drizzle with olive oil and season with flaky sea salt and freshly ground pepper.
  7. Bake for 25–30 minutes until pastry is golden and puffed, and tomatoes have softened but not collapsed.
  8. Remove from oven and cool slightly. Garnish with fresh basil leaves, drizzle honey or balsamic glaze if using, and sprinkle toasted pine nuts or walnuts if desired.
  9. Serve warm or at room temperature.

Pat tomatoes dry if very juicy to prevent soggy crust. Score pastry border carefully to create a raised edge. Blend cheese filling thoroughly for smooth texture. Watch oven closely to avoid burning. Let tart cool 10 minutes before slicing for cleaner cuts. Can assemble ahead and refrigerate up to 24 hours before baking.
