Flavorful Honey Walnut Fig Jam Recipe with Vanilla Bean and Black Pepper

A vibrant and layered fig jam combining fresh figs, honey, toasted walnuts, vanilla bean, and a hint of black pepper for a cozy, sophisticated spread.

  • 2 pounds (900g) fresh figs, ripe but firm
  • 3/4 cup (180ml) honey, mild floral like clover or wildflower
  • 1 cup (120g) walnuts, toasted and roughly chopped
  • 1 whole vanilla bean pod, seeds scraped
  • 2 tablespoons (30ml) fresh lemon juice
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 cup (60ml) water

Instructions

  1. Rinse fresh figs gently under cold water and pat dry. Remove stems and chop figs into quarters.
  2. Toast walnuts in a dry skillet over medium heat for about 5 minutes until golden and fragrant. Cool and roughly chop.
  3. Split the vanilla bean lengthwise and scrape out the seeds. Set seeds and pod aside.
  4. In a heavy-bottomed saucepan, combine chopped figs, honey, water, lemon juice, vanilla seeds, and the vanilla pod. Stir gently.
  5. Bring mixture to a gentle boil over medium heat, then reduce heat to low and simmer uncovered, stirring occasionally, for 30-40 minutes until thickened.
  6. About 5 minutes before done, stir in freshly cracked black pepper and toasted walnuts to keep walnuts crunchy and pepper fresh.
  7. Test jam thickness by placing a spoonful on a chilled plate; it should wrinkle slightly after a minute. Continue simmering if too runny.
  8. Remove and discard the vanilla pod once jam is thickened.
  9. Let jam cool slightly, then spoon into sterilized glass jars. Seal tightly and refrigerate.

Notes

Use freshly cracked black pepper for best flavor. Toast walnuts carefully to avoid burning. If fresh figs are unavailable, soak dried figs in warm water for 30 minutes before use. For smoother jam, pulse figs in a food processor before cooking. Sterilize jars by boiling for 10 minutes for longer storage. Store jam refrigerated up to 3 weeks or freeze up to 3 months.
