A moist and tender banana bread with a fluffy crumb, made with simple pantry ingredients and a secret addition of blended cottage cheese for extra moisture.

  • 3 medium ripe bananas, mashed
  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar (can reduce to ½ cup for less sweetness)
  • ½ cup (115g) unsalted butter, melted and cooled
  • 2 large eggs, at room temperature
  • ½ cup (120g) cottage cheese, blended smooth
  • 1 teaspoon vanilla extract
  • Optional add-ins: ½ cup chopped walnuts or pecans, or ½ cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan lightly with butter or non-stick spray. Line with parchment paper if desired.
  2. Mash the bananas in a medium bowl until mostly smooth with a few small lumps remain. Set aside.
  3. Blend the cottage cheese until smooth using a blender, food processor, or whisk vigorously.
  4. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. In a separate bowl, combine melted butter, sugar, eggs, mashed bananas, vanilla extract, and blended cottage cheese. Mix until smooth and well combined, about 1-2 minutes.
  6. Slowly fold the dry ingredients into the wet ingredients using a rubber spatula, stirring just until combined with a few flour streaks remaining.
  7. Fold in any optional add-ins gently to avoid sinking.
  8. Pour batter into prepared loaf pan and smooth the top. Tap pan lightly on countertop to release air bubbles.
  9. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if top browns too quickly.
  10. Cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Do not overmix the batter to keep the bread fluffy. Use very ripe bananas for best flavor and sweetness. Let melted butter cool to warm before mixing to avoid scrambling eggs. Start checking doneness at 55 minutes. Cooling on a rack prevents sogginess. For a crisp top, leave bread uncovered in oven for last 5 minutes of baking.
