  • ½ cup (115g) unsalted butter, cut into pieces (for syrup)
  • ¼ cup (60ml) fresh lemon juice (about 2 lemons)
  • ½ cup (100g) granulated sugar (for syrup)
  • 2 tablespoons water (for syrup)
  • 1 teaspoon finely grated lemon zest (for syrup)

Instructions

  1. In a large bowl, whisk together 1 ½ cups all-purpose flour, 2 teaspoons baking powder, 2 tablespoons sugar, and ¼ teaspoon salt until evenly distributed.
  2. In a separate bowl, whisk 1 ¼ cups milk with 2 large eggs until smooth and slightly frothy. Stir in 3 tablespoons melted butter (cooled) and 1 teaspoon vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined; do not overmix, leaving a few lumps.
  4. Carefully fold in 1 cup wild huckleberries, fresh or frozen. If frozen, fold gently and quickly to avoid bleeding.
  5. Heat a non-stick skillet or griddle over medium-low heat and brush lightly with melted butter. Let it get hot but not smoking.
  6. Pour about ¼ cup batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip carefully and cook the other side for 1-2 minutes until golden brown and cooked through. Adjust heat as needed.
  7. While pancakes cook, combine ½ cup butter, ½ cup sugar, ¼ cup lemon juice, 2 tablespoons water, and 1 teaspoon lemon zest in a small saucepan over medium heat. Stir gently until butter melts and sugar dissolves. Simmer gently for 2-3 minutes until slightly thickened, then remove from heat.
  8. Stack pancakes on plates and drizzle generously with lemon butter syrup. Serve warm immediately.

Notes

Do not overmix the batter to keep pancakes fluffy. Fold in frozen berries gently and do not thaw to avoid color bleeding. Cook pancakes on medium-low heat to prevent burning and ensure even cooking. Keep cooked pancakes warm in a low oven if needed. The lemon butter syrup should be cooked gently to avoid scorching.
