  • 1/2 cup (120 ml) sour cream (full-fat preferred; Greek yogurt as alternative)
  • 1 tablespoon (15 ml) fresh lime juice
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 small garlic clove, minced or grated
  • 1/2 teaspoon salt (adjust to taste)
  • 12 tablespoons (1530 ml) water, to thin if needed

Instructions

  1. Cut 1 medium ripe avocado in half, remove the pit, and scoop the flesh into a food processor or blender bowl.
  2. Add 1/2 cup sour cream and 1 tablespoon fresh lime juice to the avocado.
  3. Add 1 small minced garlic clove and 2 tablespoons chopped fresh cilantro.
  4. Season with 1/2 teaspoon salt.
  5. Pulse or blend the ingredients until creamy but still with a bit of texture, about 30-45 seconds. Avoid over-blending to keep some avocado bits.
  6. If the crema is too thick for drizzling, add 1-2 tablespoons of water and pulse to combine until velvety but pourable.
  7. Taste and adjust seasoning with more salt or lime juice if needed.
  8. Serve immediately or refrigerate for 10-15 minutes to let flavors meld.

Notes

Use ripe but firm avocado for best texture. Avoid over-blending to keep some texture. Lime juice helps prevent browning and keeps the color vibrant. For dairy-free, substitute sour cream with full-fat coconut yogurt or cashew cream. Keep the avocado pit in the crema when refrigerating to reduce browning.
