A fresh, tangy, and colorful salad or dip made with black beans, corn, avocado, and a zesty lime cilantro dressing. Perfect as a side, snack, or topping for various dishes.

  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup corn kernels, fresh or frozen
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red bell pepper, finely chopped
  • ½ cup red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • Juice of 2 medium limes (about 3 tablespoons)
  • 3 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste

Instructions

  1. Rinse and drain the black beans and corn kernels to remove excess moisture.
  2. Dice the red bell pepper, halve the cherry tomatoes, finely mince the red onion, and if using, finely chop the seeded jalapeño.
  3. Carefully cut and peel the ripe avocado into bite-sized cubes.
  4. In a small bowl, whisk together lime juice, olive oil, minced garlic, ground cumin, salt, and black pepper. Adjust seasoning to taste.
  5. In a large mixing bowl, gently fold together the beans, corn, chopped vegetables, avocado, and cilantro.
  6. Pour the dressing over the mixture and toss lightly to coat evenly, avoiding over-mixing to prevent avocado from mashing.
  7. Optionally, chill the cowboy caviar in the refrigerator for 20–30 minutes to allow flavors to meld before serving.

Notes

Add avocado last and fold gently to prevent browning and mashing. Fresh lime juice is key for brightness. Letting the salad rest for 20 minutes enhances flavor. For dairy-free, omit cheese; queso fresco can be added for richness. Rinse beans thoroughly to remove canning liquid. Adjust cilantro and jalapeño to taste.
