  • 2 large cucumbers (English or Kirby cucumbers)
  • 1 small red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Wash and dry the cucumbers. Using a sharp knife or mandoline, slice them into thin rounds about 1/8 inch (3 mm) thick. Peel partially or fully if desired.
  2. Optional: Place cucumber slices in a colander, sprinkle lightly with salt, and let sit for 10 minutes to draw out excess water. Rinse and pat dry.
  3. Thinly slice the red onion into rings or half-moons. For milder flavor, soak in cold water for 5-10 minutes, then drain well.
  4. In a bowl, whisk together Greek yogurt, fresh dill, lemon juice, Dijon mustard, minced garlic, olive oil (if using), salt, and pepper until smooth and creamy. Adjust seasoning to taste.
  5. Add the cucumber and onion slices to the dressing. Gently toss until evenly coated.
  6. Let the salad sit in the fridge for 10 minutes before serving to allow flavors to meld.

Notes

Salting cucumbers helps remove excess moisture and keeps the salad crisp. Use full-fat Greek yogurt for best creamy texture. Fresh dill is preferred over dried. The salad is best served chilled and consumed within 24 hours for optimal texture. Optional substitutions include dairy-free yogurt for vegan version and apple cider vinegar instead of lemon juice.
