Fresh Crisp Cucumber Dill Salad with Feta

A quick and easy fresh cucumber salad featuring crisp cucumbers, sharp red onion, creamy feta, and bright fresh dill tossed in a light lemon and olive oil dressing. Perfect for summer meals and ready in under 5 minutes.

Ingredients

  • 2 medium English cucumbers, thinly sliced
  • ½ small red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • 3 tablespoons finely chopped fresh dill
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 medium lemon (about 2 tablespoons)
  • 1 small clove garlic, minced (optional)
  • Salt and pepper to taste
  • Optional: pinch of crushed red pepper flakes
  • Optional: 1 teaspoon honey

Instructions

  1. Rinse cucumbers under cold water and dry. Slice thinly into rounds about 1/8 inch thick. Peel partially or leave skin on as preferred.
  2. Peel and halve the red onion. Slice thin half-moons about 1/16 inch thick. Soak in ice water for 10 minutes if you want to mellow the sharpness, then drain and pat dry.
  3. Rinse fresh dill, shake off excess water, strip leaves from stems, and finely chop to get about 3 tablespoons.
  4. In a small bowl, whisk together lemon juice, olive oil, minced garlic (if using), salt, and pepper until emulsified. Adjust seasoning to taste.
  5. In a mixing bowl, combine sliced cucumbers, red onion, and chopped dill. Pour dressing over and toss gently but thoroughly to coat evenly.
  6. Crumble feta cheese over the salad and toss gently one last time to distribute without breaking chunks.
  7. Let the salad rest at room temperature for 10-15 minutes before serving to allow flavors to meld and cucumbers to absorb dressing slightly.

Notes

Use fresh dill only for best flavor; avoid dried dill. Soaking red onion in ice water mellows sharpness. Add feta just before serving or after resting to keep texture. If cucumbers are very juicy, salt and drain slices to avoid watery salad. Salad is best served fresh or within a few hours. Store leftovers in airtight container in fridge up to 2 days, drain excess liquid before serving again.
