A light and satisfying chicken salad made with creamy Greek yogurt, juicy grapes, and toasted pecans for a fresh twist on a classic dish.

  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 1 cup red seedless grapes, halved
  • ½ cup pecans, toasted and roughly chopped
  • 1 stalk celery, finely chopped
  • 2 tablespoons red onion, finely diced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon fresh herbs (dill or parsley), optional

Instructions

  1. Toast the pecans in a dry skillet over medium heat, stirring frequently for 4-5 minutes until fragrant and golden. Transfer to a plate to cool.
  2. Dice or shred about 2 cups of cooked chicken breast. Remove skin and bones if using rotisserie chicken.
  3. Halve the grapes, finely chop celery and red onion, and roughly chop fresh herbs if using.
  4. In a mixing bowl, combine Greek yogurt, lemon juice, honey, Dijon mustard, salt, and pepper. Whisk gently until smooth.
  5. Add chicken, grapes, celery, onion, toasted pecans, and herbs to the bowl with the dressing. Fold gently to coat evenly without breaking the grapes.
  6. Taste and adjust seasoning with more salt, lemon juice, or honey as desired.
  7. Optional: Chill the salad in the fridge for at least 30 minutes to let flavors meld before serving.

Notes

Use full-fat or 2% Greek yogurt for best creaminess. Toast pecans carefully to avoid burning. Fold gently to keep grapes intact. Add pecans just before serving if making ahead to keep them crunchy. Can substitute grapes with apples or pears when out of season. For dairy-free, use coconut or almond yogurt and replace chicken with chickpeas or tofu.
