A smoky, creamy, and bright summer salsa featuring grilled corn, ripe avocado, and fresh herbs. Perfect as a BBQ side or a fresh topping for grilled meats and snacks.

Ingredients

  • 4 ears fresh corn on the cob, husked
  • 2 medium ripe avocados, diced
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 400°F / 200°C).
  2. Husk the corn completely and remove all silk strands. Lightly brush each ear with olive oil.
  3. Grill the corn, turning every 2-3 minutes until golden brown spots appear and a smoky aroma develops, about 10-12 minutes total.
  4. Let the corn cool for a few minutes, then slice the kernels off the cob using a sharp knife.
  5. While the corn cools, dice the avocados, halve the tomatoes, finely chop the red onion and cilantro, and mince the jalapeño if using.
  6. In a medium mixing bowl, gently toss the grilled corn kernels, avocado, tomatoes, red onion, cilantro, and jalapeño.
  7. Drizzle with lime juice and olive oil, then season with salt and pepper to taste (start with ½ teaspoon salt and ¼ teaspoon pepper).
  8. Let the salsa rest at room temperature for about 10 minutes to allow flavors to meld before serving.

Notes

Use fresh lime juice for best flavor. Rotate corn frequently while grilling for even caramelization. Dice avocados last if underripe to avoid mushiness. Store leftovers in an airtight container with extra lime juice and plastic wrap pressed on surface to limit browning. Can substitute cherry tomatoes with diced mango or pineapple for a fruit twist. Jalapeño is optional and can be omitted for mild salsa.
