A simple yet elegant salad featuring smoky grilled nectarines, creamy burrata cheese, and a delicate honey drizzle, perfect for summer gatherings or a light meal.

  • 3 medium ripe nectarines, halved and pitted
  • 1 ball (8 ounces) burrata cheese
  • 2 tablespoons raw or mild-flavored honey
  • 4 cups mixed greens (arugula or spring mix)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon fresh lemon juice
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: fresh basil or mint leaves for garnish

Instructions

  1. Preheat grill or grill pan to medium-high heat (375–400°F).
  2. Rinse and dry nectarines. Halve and pit them. Brush cut sides lightly with olive oil.
  3. Place nectarines cut-side down on the grill. Grill for 3-4 minutes without moving to get char marks.
  4. Flip nectarines and grill skin side for another 2 minutes until tender but holding shape.
  5. While nectarines grill, toss mixed greens with remaining olive oil, lemon juice, sea salt, and black pepper.
  6. Arrange greens on a serving platter or bowl. Tear burrata into chunks and scatter over greens.
  7. Nestle grilled nectarines on top, cut side up.
  8. Drizzle honey evenly over the salad, focusing on burrata and nectarines.
  9. Optional: garnish with torn basil or mint leaves and a sprinkle of black pepper.
  10. Serve immediately for best flavor and texture.

Notes

Pat nectarines dry if very juicy to avoid flare-ups. Let burrata sit at room temperature for 15 minutes before assembling for best texture. Assemble salad just before serving to keep greens fresh and burrata creamy. Mild floral honey works best for a balanced sweetness.
