A quick and easy parfait featuring smoky caramelized grilled peaches layered with creamy Greek yogurt and crunchy honey granola, perfect for breakfast, snack, or light dessert.

Ingredients

Scale
  • 34 ripe peaches, halved and pitted
  • 2 cups (about 16 fl oz) plain Greek yogurt, full-fat or 2%
  • 1 cup (about 4.2 oz) honey granola, homemade or store-bought
  • 2 tablespoons honey, for drizzling
  • 1 teaspoon freshly squeezed lemon juice
  • ½ teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 375°F).
  2. Rinse and dry the peaches, then halve and pit them. Brush the cut sides lightly with lemon juice and sprinkle with cinnamon if using.
  3. Place peaches cut side down on the grill. Grill for 3-4 minutes per side until grill marks appear and peaches are tender but not falling apart.
  4. Remove peaches from heat and let them cool for 5 minutes.
  5. In a bowl, stir the yogurt gently to loosen it. Optionally, drizzle in a teaspoon of honey to sweeten.
  6. In serving glasses or bowls, layer about ⅓ cup yogurt, 2-3 grilled peach halves, and about 2 tablespoons honey granola. Repeat layers until the glass is filled.
  7. Finish with a drizzle of honey over the top and garnish with a pinch of cinnamon or fresh mint leaves if desired.

Notes

Use firm but ripe peaches for grilling to avoid mushiness. Lemon juice prevents browning and adds brightness. Add granola just before serving to keep it crunchy. You can grill peaches ahead and store refrigerated for up to 2 days. For gluten-free, use certified gluten-free granola. Dairy-free options include coconut yogurt and dairy-free granola.
