  • 1 tablespoon extra virgin olive oil

  • ½ cup crumbled feta cheese (about 75 g)
  • 23 tablespoons balsamic glaze or reduction (3045 ml)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Cut the seedless watermelon into 1-inch thick slabs, then cut those slabs into bite-sized steak-like cubes about 1 to 1.5 inches wide.
  2. Preheat the grill or grill pan to medium-high heat.
  3. Place the watermelon cubes in a bowl and drizzle with 1 tablespoon of extra virgin olive oil. Toss gently to coat.
  4. Season lightly with salt and freshly ground black pepper.
  5. Arrange the watermelon cubes on the grill, leaving space between each piece.
  6. Grill for about 2-3 minutes per side, turning carefully with tongs or a spatula to avoid breaking the pieces, until grill marks form and a slight caramelized crust appears.
  7. Transfer the grilled watermelon steak bites to a serving platter.
  8. Immediately crumble about ½ cup of feta cheese over the warm watermelon.
  9. Drizzle 2-3 tablespoons of balsamic glaze evenly over the watermelon and feta.
  10. Optionally, scatter fresh mint leaves on top for garnish.
  11. Serve warm or at room temperature.

Notes

Use firm, cold watermelon for best grilling results. Brush watermelon lightly with olive oil to prevent sticking. Grill on medium-high heat to get caramelized grill marks without burning.
