Instructions

  1. Prepare the balsamic reduction: Pour ½ cup balsamic vinegar into a small saucepan over medium heat. Add 1 tablespoon honey or brown sugar. Stir occasionally and simmer for 10-15 minutes until thick and syrupy. Set aside to cool.
  2. Dice the heirloom tomatoes into roughly ½-inch pieces.
  3. Mince the garlic and mix it with the diced tomatoes in a bowl.
  4. Slice the basil leaves into thin ribbons and add to the tomato mixture.
  5. Drizzle 3 tablespoons olive oil over the tomato mixture. Season with ½ teaspoon sea salt and freshly ground black pepper. Gently toss to combine.
  6. Heat a grill pan or skillet over medium-high heat. Lightly brush bread slices with olive oil and toast for 1-2 minutes per side until golden and crispy.
