Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with non-stick spray.
  2. Grate about 1 ½ cups of zucchini using the fine side of a box grater. Place in a clean kitchen towel or paper towels and gently squeeze out excess moisture.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds.
  4. In a large mixing bowl, beat granulated sugar with eggs until light and fluffy (about 2-3 minutes). Add vegetable or melted coconut oil, vanilla extract, lemon zest, and fresh lemon juice. Stir well.
  5. Gently fold the grated zucchini into the wet mixture until evenly distributed.
