A quick and easy no-cook tomato bruschetta bar perfect for entertaining, featuring fresh tomatoes, basil, garlic, and toasted bread with customizable toppings.

  • 4 cups (600g) ripe tomatoes (Roma, vine-ripened beefsteak, cherry, grape, or heirloom)
  • 1/4 cup (15g) fresh basil leaves, torn or chopped
  • 2 cloves garlic, minced or finely grated
  • 3 tablespoons (45ml) extra virgin olive oil
  • 1 tablespoon (15ml) balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 baguette or rustic Italian bread, sliced into 1/2-inch (1.25cm) rounds, toasted
  • Optional toppings: shredded mozzarella or crumbled feta cheese, chopped olives or capers, red pepper flakes, fresh lemon zest or juice

Instructions

  1. Rinse and dry about 4 cups (600g) of tomatoes. Dice larger tomatoes into small pieces; halve or quarter cherry tomatoes. Place in a medium bowl.
  2. Finely chop 1/4 cup (15g) fresh basil leaves and mince 2 cloves of garlic. Toss into the tomatoes gently.
  3. Drizzle 3 tablespoons (45ml) extra virgin olive oil and 1 tablespoon (15ml) balsamic vinegar over the tomatoes. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Stir gently to combine. Taste and adjust seasoning as needed.
  4. Slice a baguette or rustic bread into 1/2-inch (1.25cm) thick rounds. Toast in a toaster, under the broiler, or on a grill pan until golden and crisp but not burnt.
  5. Place toasted bread slices on a large platter. Spoon the tomato mixture into a serving bowl. Set out optional toppings like shredded mozzarella, crumbled feta, olives, and red pepper flakes in small bowls alongside.
  6. Encourage guests to build their own bruschetta by layering tomatoes and toppings on the bread. Store leftover tomato mixture and bread separately in the fridge for up to 2 days.

Notes

If tomatoes seem watery, drain excess juice before mixing to keep bread crisp. Let tomato mixture sit for 10 minutes before serving to meld flavors. Toast bread just before serving to maintain crunch. For dairy-free, skip cheese or use vegan alternatives. Smaller spoonfuls prevent sogginess and mess.
