  • 4 fresh ripe peaches, sliced into wedges
  • 8 ounces creamy burrata cheese
  • 1 cup fresh basil leaves, whole
  • 2 tablespoons extra virgin olive oil
  • 1 to 2 tablespoons balsamic glaze or reduction
  • Sea salt, flaky (such as Maldon), to taste
  • Freshly ground black pepper, to taste
  • Optional: toasted pine nuts or sliced almonds for crunch

Instructions

  1. Rinse the peaches under cool water and pat dry. Slice each peach into thin wedges about 1/4 inch thick.
  2. Drain the burrata from its liquid and pat dry gently with a paper towel. Place in the center of your serving dish.
  3. Arrange the peach slices fanned out around the burrata in a circular pattern, overlapping slightly. Scatter fresh basil leaves over and under the peaches.
  4. Lightly sprinkle flaky sea salt and freshly ground black pepper over the peaches and burrata.
  5. Drizzle about 2 tablespoons of extra virgin olive oil evenly over the salad, followed by 1 to 2 tablespoons of balsamic glaze.
  6. If using, sprinkle toasted pine nuts or sliced almonds over the salad for added texture.
  7. Let the salad rest for 5 minutes before serving to allow flavors to meld.

Bring burrata to room temperature before serving for best creaminess. Use ripe but firm peaches to avoid mushiness. Drizzle balsamic glaze slowly to control sweetness.
