  • 1012 medium fresh jalapeños, sliced into rings
  • Juice and zest of 2 fresh limes
  • 1 cup (240 ml) white vinegar
  • 1 cup (240 ml) water
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 2 garlic cloves, smashed
  • 1 teaspoon black peppercorns
  • Small handful cilantro stems (optional)

Instructions

  1. Rinse the jalapeños under cold water and slice into thin rings about 1/8-inch thick. Wear gloves if possible.
  2. In a small saucepan, combine white vinegar, water, sugar, and salt. Heat over medium heat, stirring until sugar and salt dissolve, about 3-5 minutes. Remove from heat.
  3. Stir in the freshly grated zest and juice of 2 limes into the warm brine.
  4. In a clean glass jar, add sliced jalapeños, smashed garlic cloves, black peppercorns, and cilantro stems if using. Press down lightly.
  5. Pour the warm lime brine over the jalapeños, ensuring they are fully submerged. Leave about 1/2 inch of headspace at the top.
  6. Seal the jar tightly and let it cool to room temperature, about 30 minutes.
  7. Refrigerate the jar. Jalapeños are ready after at least 1 hour but develop better flavor after 12-24 hours.
  8. Use as a spicy topping on tacos, sandwiches, or stirred into creamy dishes.

Notes

Use fresh, firm jalapeños for best crunch. Warm the brine just enough to dissolve sugar and salt; avoid boiling to preserve lime flavor. Wear gloves when handling jalapeños to avoid burns. Let flavors meld for at least 12 hours for best taste. Store refrigerated up to 4 weeks. If jalapeños float, press them down to keep submerged. Cloudy brine after a few days is normal.
