  • 1012 medium fresh jalapeños, washed and sliced into rings
  • 45 large garlic cloves, thinly sliced
  • Zest of 1 large lime
  • 1 cup (240 ml) white distilled vinegar
  • 1 cup (240 ml) water, preferably filtered or spring water
  • 1 tablespoon sugar
  • 1 teaspoon kosher salt or sea salt
  • Optional: 1 teaspoon black peppercorns or a pinch of dried oregano

Instructions

  1. Rinse jalapeños and slice them into 1/4-inch (6 mm) rings. Use gloves if sensitive to heat.
  2. Thinly slice garlic cloves and zest the lime carefully to avoid the bitter white pith. Set aside.
  3. In a medium saucepan, combine vinegar, water, sugar, and salt. Heat gently over medium heat, stirring occasionally until sugar and salt dissolve completely, about 3-4 minutes. Do not boil.
  4. Place jalapeño slices, garlic, lime zest, and optional spices into a sterilized 16 oz (500 ml) glass jar. Pack snugly but do not crush.
  5. Pour the hot brine over the peppers and garlic until fully submerged, leaving about 1/2 inch (1.25 cm) headspace. Tap the jar gently to release air bubbles.
  6. Seal the jar tightly and let it cool to room temperature on the counter for 30-45 minutes, then transfer to the refrigerator.
  7. Wait at least 24 hours before opening for best flavor; they taste better after a few days. Store refrigerated up to 4 weeks.

Notes

Use gloves when slicing jalapeños to avoid skin irritation. Do not boil the brine; heat just enough to dissolve sugar and salt. Use glass jars for best crispness and flavor. For less heat, remove seeds and membranes before slicing. Shake jar gently once a day to help flavors mingle. Store refrigerated and consume within 4 weeks.
