Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or grease it well.
  2. Melt the butter in a microwave-safe bowl or on the stove over low heat. Whisk in the granulated sugar until smooth and glossy.
  3. Add the eggs one at a time, whisking thoroughly after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, cocoa powder, and salt.
  6. Gradually fold the dry ingredients into the wet mixture using a rubber spatula, being careful not to overmix.
  7. If using, fold in the semi-sweet chocolate chips, reserving some to sprinkle on top before baking.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 25-30 minutes until edges are set and a toothpick inserted in the center comes out with moist crumbs.
  10. While baking, chop the peppermint bark roughly and set aside.
  11. Let the brownies cool for 15 minutes after baking.
  12. Sprinkle the chopped peppermint bark evenly over the surface.
  13. Gently melt the peppermint bark in a double boiler or microwave, stirring every 15 seconds until smooth.
  14. Drizzle or spread the melted peppermint bark over the brownies using an offset spatula or the back of a spoon.
  15. Let the pan cool completely on a wire rack, then refrigerate for at least 30 minutes to firm up the topping.
  16. Cut into squares using a sharp knife warmed under hot water for clean cuts.
