  • 1.5 lbs (680g) boneless, skinless chicken breasts or thighs
  • 1 cup (180g) uncooked wild rice
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 medium carrots, diced (about 1.5 cups)
  • 3 celery stalks, diced (about 1 cup)
  • 4 garlic cloves, minced
  • 6 cups (1.4 liters) low-sodium chicken broth
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 8 oz (226g) block cream cheese, softened
  • ½ cup (120ml) heavy cream or half-and-half (optional)
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Prep your veggies first. Dice the onion, carrots, and celery into roughly equal-sized pieces. Mince the garlic.
  2. Layer everything in the crockpot. Start with the diced veggies and garlic at the bottom. Place the chicken on top. Sprinkle the rinsed wild rice over everything.
  3. Add the liquids and seasonings. Pour in the chicken broth. Add the dried thyme, rosemary, bay leaves, salt, and pepper. Give it a gentle stir.
  4. Cook on low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, remove the chicken and place it on a cutting board. Use two forks to shred it. Discard the bay leaves.
  6. Cut the softened cream cheese into cubes and stir it into the hot soup until completely melted and smooth. If desired, blend a cup or two of the soup and stir it back in for extra creaminess.
  7. Return the shredded chicken to the soup. Let everything heat through for another 10-15 minutes. Taste and adjust salt and pepper.
  8. Serve hot, garnished with fresh parsley.

Notes

For the creamiest result, use full-fat cream cheese and let it come to room temperature before adding. If the soup seems too thick after cooking, stir in a little extra broth or water. Wild rice continues to absorb liquid even after cooking, so leftovers will thicken overnight.
