  • 1 tsp (7 g) honey or maple syrup (optional)
  • 1/4 tsp vanilla extract
  • Pinch of cinnamon

Instructions

  1. Mash the banana in a mixing bowl or directly in your jar until mostly smooth but still a bit chunky (about 2 minutes).
  2. Add 2 tablespoons of natural peanut butter and stir well to blend with the banana. Warm slightly if peanut butter is too stiff (1-2 minutes).
  3. Mix in 1/2 cup rolled oats and 1 teaspoon chia seeds (1 minute).
  4. Pour in 1/2 cup milk and 2 tablespoons Greek yogurt if using (1 minute).
  5. Stir in 1 teaspoon honey or maple syrup, 1/4 teaspoon vanilla extract, and a pinch of cinnamon (1 minute).
  6. Combine thoroughly until the mixture is creamy and well mixed (1-2 minutes).
  7. Seal the jar or container tightly and refrigerate for at least 6 hours, ideally overnight.
  8. In the morning, stir the oats well. Add a splash of milk if too thick. Top with sliced bananas, chopped nuts, or a drizzle of peanut butter if desired (1-2 minutes).

Use rolled oats for best texture; instant oats get mushy. Mash banana well for creamy texture. Use natural peanut butter without added sugar or oils.
