  • 1 cup (245g) pumpkin puree
  • 1/3 cup (113g) honey
  • 2 large eggs, at room temperature
  • 1/2 cup (120ml) milk (dairy or plant-based)
  • 1/4 cup (60ml) coconut oil, melted
  • 1/4 cup (50g) brown sugar, packed
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped walnuts, pecans, chocolate chips, or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups well.
  2. In a large bowl, whisk together the eggs, honey, milk, melted coconut oil, brown sugar, vanilla extract, and pumpkin puree until smooth and well combined.
  3. Add the rolled oats to the wet mixture and stir to combine. Let this sit for 10 minutes. This is the most important step—the oats need time to absorb liquid, which softens them and prevents dense muffins.
  4. In a separate medium bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients and fold together with a rubber spatula just until no streaks of flour remain. If adding mix-ins, fold them in now.
  6. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Optional: While still warm, brush the tops with a little extra honey for a beautiful shine.
