Made with lean ground turkey, a flavorful homemade seasoning, and crisp lettuce cups, they come together in just 15 minutes and are perfect for busy weekdays.

  • 1 pound (450g) ground turkey (93% lean)
  • 1 tablespoon (15ml) olive oil
  • ½ cup (75g) diced yellow onion
  • 2 garlic cloves, minced
  • 1 tablespoon (8g) chili powder
  • 1 teaspoon (2g) ground cumin
  • 1 teaspoon (2g) smoked paprika
  • ½ teaspoon (1.5g) garlic powder
  • ½ teaspoon (1.5g) onion powder
  • ½ teaspoon (1g) dried oregano
  • ½ teaspoon (3g) salt
  • ¼ teaspoon (0.5g) black pepper
  • 2 tablespoons (30g) tomato paste
  • ¼ cup (60ml) chicken broth
  • 1 large head butter lettuce
  • Toppings: diced tomatoes, shredded cheddar, sour cream or Greek yogurt, lime wedges, sliced avocado, fresh cilantro (optional)

Instructions

  1. In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper. Stir with a fork to break up any clumps.
  2. Place a large skillet over medium-high heat and add olive oil. Let it warm up for about 30 seconds until it shimmers.
  3. Add diced onion to the pan. Cook for 2-3 minutes, stirring occasionally, until translucent and softened.
  4. Add minced garlic and cook for 30 seconds, stirring constantly.
  5. Add ground turkey to the pan. Break it up with a wooden spoon into small crumbles. Let it cook undisturbed for 2-3 minutes to get some browning, then stir and continue cooking for another 4-5 minutes until no pink remains.
  6. Sprinkle the seasoning mix over the cooked turkey. Stir well to coat every piece. Let it cook for 30 seconds to toast the spices.
  7. Add tomato paste and chicken broth. Stir until the tomato paste dissolves and the mixture looks saucy. Let it simmer for 2-3 minutes, stirring occasionally, until most of the liquid has absorbed.
  8. Taste and adjust seasoning if needed. Add a squeeze of lime if desired.
  9. While the turkey cooks, wash the butter lettuce and dry it thoroughly. Separate the leaves gently, keeping whole cup-shaped leaves. Pat dry with paper towels if needed.
  10. Lay out lettuce cups on a plate. Spoon about 2-3 tablespoons of the turkey mixture into each one. Top with desired toppings.
  11. For lunchboxes, pack the turkey mixture, lettuce leaves, and toppings in separate containers. Assemble just before eating to prevent sogginess.

Keep the turkey mixture and lettuce separate until ready to eat to prevent sogginess. Dry lettuce thoroughly after washing. For extra flavor, toast the spices for 30 seconds after adding them to the pan. The flavors deepen after a day in the fridge.
