  • 3 medium bell peppers (about 1 pound), chopped (mix of red, green, yellow)
  • 1 medium onion (about 5.3 oz), diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes with juices
  • 4 cups chicken broth
  • ½ cup uncooked white long grain rice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large soup pot over medium heat for about 1 minute.
  2. Add the diced onion and cook for 3–4 minutes until translucent and fragrant.
  3. Add the minced garlic and stir for another 30 seconds, being careful not to burn it.
  4. Add the ground turkey, breaking it up with a spoon, and cook until no longer pink, about 6–8 minutes. Season with salt and pepper during cooking.
  5. Stir in the chopped bell peppers and cook for 5 minutes until slightly softened but still vibrant.
  6. Pour in the tomato sauce and diced tomatoes with juices, stirring well to combine.
  7. Add the chicken broth, Worcestershire sauce, Italian seasoning, paprika, and additional salt and pepper to taste.
  8. Bring the soup to a gentle simmer over medium-high heat, then reduce heat to low and cover with a lid.
  9. After simmering for about 10 minutes, stir in the uncooked rice. Cover and cook for another 15–18 minutes, stirring occasionally, until the rice is tender but not mushy.
  10. Check seasoning and adjust salt and pepper if needed.
  11. Serve warm immediately. Leftovers taste better the next day.

Notes

If the soup thickens too much after resting, stir in a splash of broth or water when reheating. Use long grain white rice to prevent mushiness. Worcestershire sauce adds subtle umami; soy sauce or tamari can be used as substitutes. For gluten-free, verify broth and Worcestershire sauce labels. Brown rice requires longer cooking or pre-cooking. Cauliflower rice can be used for a low-carb version added near the end of cooking.
