A quick and easy weeknight dinner featuring juicy boneless chicken thighs glazed with a sticky, sweet, and spicy honey sriracha sauce. Perfectly balanced flavors with minimal fuss.

  • 1.5 pounds boneless, skinless chicken thighs
  • 1/4 cup (85 grams) honey
  • 23 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • Black pepper, to taste
  • 2 tablespoons neutral cooking oil (canola or vegetable)
  • 2 stalks green onions, thinly sliced for garnish
  • 1 teaspoon sesame seeds (optional)

Instructions

  1. In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, minced garlic, and sesame oil (if using). Set aside.
  2. Pat chicken thighs dry with paper towels and season both sides with freshly cracked black pepper.
  3. Heat a large skillet over medium-high heat and add cooking oil. Heat until shimmering but not smoking, about 2 minutes.
  4. Add chicken thighs to the pan, skin side down, and cook undisturbed for 4-5 minutes until golden brown and caramelized. Flip and cook the other side for 4 minutes.
  5. Reduce heat to medium-low and pour the honey sriracha sauce over the chicken. Use tongs or a spoon to coat each piece evenly.
  6. Simmer the chicken in the sauce for 3-4 minutes, spooning the thickened sauce over the thighs regularly until the sauce caramelizes and thickens. Avoid burning by adjusting heat as needed.
  7. Check that the chicken reaches an internal temperature of 165°F (74°C) or is no longer pink inside.
  8. Remove from heat and garnish with sliced green onions and sesame seeds if desired. Serve immediately.

Notes

Pat chicken dry before cooking for a better sear. Adjust sriracha amount to control spice level. Rest chicken 5 minutes before serving to redistribute juices. Sauce can be prepared ahead and stored in fridge up to 3 days. For gluten-free, substitute soy sauce with tamari or coconut aminos. Can also be baked at 400°F (200°C) for 20-25 minutes, basting halfway through.
