A warm, gooey fall dessert with a creamy pumpkin base, melty peanut butter cups, and a buttery cake topping. Incredibly easy to make and perfect for gatherings.

Ingredients

Scale
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1 can (12 oz) evaporated milk
  • 3 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 1/2 cups Reese’s peanut butter cups, roughly chopped (about 1215 mini cups or 6 regular-sized cups)
  • 1 box (15.25 oz) yellow cake mix (e.g., Duncan Hines or Betty Crocker)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together pumpkin puree, evaporated milk, eggs, granulated sugar, brown sugar, vanilla extract, pumpkin pie spice, and salt until smooth and well combined.
  3. Pour the pumpkin mixture into the prepared baking dish and spread into an even layer.
  4. Sprinkle the chopped Reese’s cups evenly over the pumpkin layer.
  5. Sprinkle the dry cake mix evenly over the top, covering the entire surface. Do not stir.
  6. Drizzle the melted butter evenly over the cake mix. If using nuts, sprinkle them over the top.
  7. Bake for 45-50 minutes, until the top is golden brown and the edges are bubbly. The center should be set but slightly jiggly.
  8. Let cool for at least 15-20 minutes before serving.
  9. Serve warm or at room temperature. Top with vanilla ice cream or whipped cream if desired.

Notes

For easier chopping, freeze peanut butter cups for 10 minutes before cutting. Let the cake cool at least 15-20 minutes before serving to allow the pumpkin layer to set. Can be assembled up to 24 hours ahead and refrigerated; add 5-10 minutes to bake time if starting from cold.
