Instructions

  1. Activate the yeast: In a large mixing bowl, combine the warm water and honey. Sprinkle the yeast on top and let it sit for 5 to 10 minutes until foamy.
  2. Make the dough: Add the all-purpose flour, whole wheat flour, salt, and melted butter to the yeast mixture. Stir until a shaggy dough forms. Turn it out onto a lightly floured surface and knead for 6 to 8 minutes until smooth and elastic.
  3. First rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm spot for 45 minutes to 1 hour, until doubled in size.
  4. Shape the bites: Punch down the dough and divide into 4 equal pieces. Roll each piece into a 12-inch long rope, 1 inch thick. Cut each rope into 1-inch pieces to get about 40 to 48 pretzel bites.
  5. Preheat and prep: Preheat oven to 450°F. Line a baking sheet with parchment paper or a silicone mat. In a large pot, bring 6 cups of water to a boil and carefully stir in the baking soda.
  6. The baking soda bath: Drop 5 to 6 pretzel bites into the boiling baking soda water at a time. Boil for 20 to 30 seconds, then transfer to the prepared baking sheet using a slotted spoon. Repeat with all bites.
  7. Egg wash and salt: Brush each pretzel bite with the beaten egg wash. Sprinkle generously with coarse sea salt or pretzel salt.

  9. Make the beer cheese dip: While the pretzel bites are baking, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly pour in the beer and milk, whisking constantly until thickened, about 3 to 4 minutes. Reduce heat to low and stir in the Greek yogurt, shredded cheddar, Dijon mustard, and garlic powder. Stir until cheese is melted and smooth. Season with salt and pepper to taste. Keep warm until ready to serve.
