  • ½ cup (50g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (about 1 medium zucchini), squeezed dry
  • ½ cup (90g) mini chocolate chips
  • 4 oz (115g) cream cheese, softened
  • ¼ cup (30g) powdered sugar
  • 1 egg yolk (from a large egg)
  • ½ teaspoon vanilla extract

Instructions

  1. Grate about 1 ½ cups of zucchini (roughly one medium zucchini). Place it in a clean kitchen towel and squeeze firmly to remove excess moisture.
  2. Preheat oven to 350°F (175°C). Line muffin tin with paper liners or grease well.
  3. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Whisk until evenly combined.
  4. In another bowl, whisk granulated sugar and vegetable oil until well blended. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  5. Gently stir grated zucchini and mini chocolate chips into the wet mixture.
  6. Add dry ingredients to the wet bowl in two additions, folding gently with a rubber spatula until just combined. Avoid overmixing.
  7. In a small bowl, beat cream cheese with powdered sugar, egg yolk, and vanilla extract until smooth and creamy.
  8. Spoon batter into muffin tin, filling each cup about two-thirds full. Drop about a tablespoon of cream cheese mixture on top of each and swirl gently with a toothpick or knife.
  9. Bake for 20-25 minutes until a toothpick inserted near the cream cheese swirl comes out mostly clean with a few moist crumbs.
  10. Let muffins cool in the pan for 10 minutes, then transfer to a wire rack. Best served warm but hold up well at room temperature for a few days.
