  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240ml) sour cream
  • 1 teaspoon pure vanilla extract
  • Zest of 2 large lemons
  • ¼ cup (60ml) fresh lemon juice
  • 1 ½ cups (225g) fresh blueberries (thawed and drained if frozen)
  • For the cream cheese frosting:
  • 8 oz (225g) cream cheese, softened
  • ½ cup (113g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat oven to 350°F (177°C). Grease and flour three 8-inch cake pans or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until pale and fluffy, about 4–5 minutes.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in sour cream, vanilla extract, lemon zest, and lemon juice until combined.
  6. Gradually add dry ingredients in thirds, mixing gently on low speed or folding by hand to avoid overmixing.
  7. Fold in blueberries gently using a rubber spatula.
  8. Divide batter evenly among prepared pans, smoothing tops.
  9. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Cool cakes in pans for 10 minutes, then turn out onto cooling racks to cool completely.
  11. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, mixing on low speed.
  12. Add vanilla extract and lemon juice, beating until light and creamy.
  13. Assemble cake by spreading frosting between layers and covering top and sides. Chill briefly and smooth with an offset spatula if desired.

Use room temperature ingredients for best texture. Fold blueberries gently to avoid color bleeding. Chill frosting if too soft before assembling. Use an offset spatula and cooling racks for best frosting results. Frozen blueberries should be thawed and drained. Toss blueberries in flour to prevent sinking.
